Max Effort Bread

Prep time: minimal
Cooking time: 20 mins or so
Serves: 1-2

2 cups almond flour
4 strips of thick cut bacon
8 large eggs
1/4 cup pickled jalapeño slices
4 slices of cheese (your choice)

Cook the bacon in a medium sized pan on medium-high heat. Toss the jalapeño slices in about half way through.

While the bacon is cooking, mix the eggs and almond flour together with one of those wire mixing things. Mix it up real good.

Once the bacon is done, pull it out and set it aside. Dump the egg mixture directly in the pan with the bacon grease and slightly browned jalapeño slices. Turn the heat down to medium and put a lid on the pan.

Let it cook for about 5 mins then flip the whole thing with a spatula. Let it cook while covered for another 5 minutes and flip again.

Put the cheese slices on top and replace cover for another 5 mins.

Take the pan off the heat and crumble the bacon on top. Cut into pieces and serve. If you’re in a serious mood, you can just cut the whole thing in half and fold it together with some meats and vegetables to make and pretty awesome sandwich.
